what are the guild choices quests

Moved this topic to questions, since it's a question about the game.
The "Guild Choice" section is essentially the Quests that the guild wants to show you. It's a selection of the Quests available that they think may be right for you - but it's not every Quest that's up at the moment.
You can search through every quest by choosing the options below "Guild Choice," e.g. "by Location" (the most commonly used option) or "by Monster Type." For example, if you wanted to go to the Jungle, then you would select "Location" and then Jungle, and then every available Quest in the Jungle would be shown to you. If you wanted to hunt, say, a Congalala, then it's probably best to chose "Monster Type" and then "Fanged Beast," and every available Quest for a Fanged Beast would be shown to you.
If you just want to see every quest that's available to you at the moment, I recommend you just flip through the "Location" tab.
Quests are not sorted nor unlocked by star rank in this game. Quests do have a star rank, but they're not unlocked in the normal progression of "key quest -> urgent quest -> next star tier" like every other Monster Hunter game.
In practice, I don't think I've ever departed on a Quest from the "Guild Choice" menu. I think it just exists in case people get overwhelmed searching for them through the other menus and just want to see a quick "random" (it's probably not random but you get the idea) assortment of the Quests available to them.
